Homemade Fish Sticks

Yummy! I don't think I will be buying the frozen kind ever again. These were so much healthier and not to mention more delicious then the frozen brands. Obviously these aren't at quick as just pulling something out of the freezer and popping it on a tray, but you cut the fish ahead of time (possibly even bread it too) and cut the prep time down at meal time. I used both salmon and cod. I loved the salmon - it makes them a little more grown-up. The rest of the family loved the cod.


Homemade Fish Sticks

Prep Time: 30 minutes
Cooking Time: 20 minutes
Servings: 4

Ingredients
18 oz fresh or frozen fish (ex. cod or salmon), thaw frozen fish
1/2 cup all purpose flour
1/2 tsp Kosher salt
1/4 tsp ground black pepper
4 egg whites
1 cup grated Parmesan
1 1/2 cups panko breadcrumbs
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp paprika
Cooking spray
Directions
Preheat the oven to 450.

Rinse the fish and pat dry with paper towels. Cut the filet down to sticks - 1/2 in by 1/2 in by 4 1/2 inches.

In separate shallow bowls, first combine flour, salt and pepper; then egg whites beaten until foamy; and panko, parmesan, paprika, garlic and onion powder. Coat each fish stick in flour, then egg and then panko mixture. 

Line the coated fish sticks up on a baking sheet coated with cooking spray. Spray the sticks liberally. Cook for 15-20 minutes. Serve with your favorite dipping sauce.

Pan-Grilled Snapper with Orzo Pasta Salad

This was new for me all the way around. I'd never had snapper or orzo. Amazing, right? I've tried a lot of things and I'm not sure why I'd never had either of these. I must say that I now love orzo! It's such a cute little pasta. For those who've never had it, it's basically a rice shaped pasta. The snapper was delicious too. Very light fish, firm textured. I can't comment on hubby's approval rating as we didn't actually eat this for dinner. I had thawed the fish and then I was too tired to make dinner after a big test. I made it the next day for lunch instead! The pasta definitely needs a little tweeking and it would be great maybe with a little feta in it!


Pan Grilled Snapper with Orzo Pasta Salad

Ingredients
1 1/2  cups uncooked orzo
2-4  (6-ounce) red snapper fillets
1/4 tsp salt
1/8 tsp black pepper
1 1/2 TBS minced shallots
1 TBS chopped fresh parsley
4 TBS fresh lemon juice
1 TBS orange juice
1 tsp Dijon mustard
2 1/2 TBS extra virgin olive oil

Directions
Cook pasta according to the package directions, omitting salt and fat. Drain and keep warm.

Heat a grill pan over medium-high heat. Coat pan with cooking spray. Sprinkle fish evenly with salt and pepper. Add fish to pan; cook 3 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness. Pour 1 TBS lemon juice over the fish.

Combine salt, pepper, shallots, parsley, remaining lemon juice, orange juice, and mustard in a small bowl, stirring well. Slowly add olive oil, stirring constantly with a whisk. Drizzle the shallot mixture over pasta; toss well to coat.

Shrimp Po'Boys

I have made these before and we love them! I usually serve them with hushpuppies (not homemade). I also serve it with a vinegar based coleslaw. I am the only one that eats the slaw, but that is okay - more for me! If you are a fan of tarter sauce, I do recommend the one with this recipe as it is delicious.


Shrimp Po'Boys

Ingredients
Po'Boys
1 lb peeled and deveined large or jumbo shrimp
2 tsp cajun seasoning
2 tsp olive oil
4 hoagie rolls
shredded romaine (optional)
sliced tomato (optional)

Tarter Sauce
1/3 cup reduced-fat mayonnaise
2 TBS sweet pickle relish
1 TBS chopped shallots
1 tsp capers, chopped
1/4 tsp Tabasco

Directions
In a small bowl, combine all ingredients for the tarter sauce and chill.

In a medium bowl, toss the shrimp with the cajun seasoning. I do recommend using the larger shrimp as the small and medium size don't stay on the bun very well. 

Heat the olive oil in a skillet over medium-high heat. Add shrimp and cook until done. 

Slice rolls and add tarter sauce, lettuce, tomato and shrimp.

Spicy Orange Shrimp

This was very good, but SPICY! I know, I know the title says "Spicy," but I was thinking this would be more of a combination of spicy and sweet. It will definitely clear your sinuses if you are having issues. I'm pretty tolerant of spicy stuff, but this was a little too much! I will definitely make this again, but only use half of the chili paste.


Spicy Orange Shrimp

Ingredients 
1 lb peeled and deveined large shrimp
1 TBS cornstarch
1/4 cup fresh orange juice
2  TBS low-sodium soy sauce
2 TBS honey
1 TBS rice wine vinegar
1 TBS chile paste with garlic (such as sambal oelek)
2 TBS canola oil
1 TBS minced peeled fresh ginger (I just use prepared chopped ginger)
3 garlic cloves, minced

Directions
Place shrimp in a medium bowl. Sprinkle with cornstarch; toss well to coat. Set aside.

Combine juice, soy sauce, honey, vinegar, and chile paste, stirring with a whisk; set aside.

Heat canola oil in a large nonstick skillet over medium-high heat. Add minced ginger and garlic to pan; stir-fry for 15 seconds or until fragrant. Add shrimp and stir-fry for 3 minutes or until slightly pink. Add juice mixture; cook 2 minutes or until sauce thickens and shrimp are done, stirring frequently. Serve over rice.

Parmesan-Herb Crusted Salmon

This recipe came in my Southern Living magazine last month and I thought it might be a good sub for our normal salmon. Hubby loved it! I'm usually pretty basic with my salmon - a little EVOO, lemon juice and dill, but I thought this was pretty easy and delicious! I forgot to take a photo so I will need to add one next time.

Parmesan-Herb Crusted Salmon

Ingredients
4 - 6 oz. salmon fillets
1 TBS fresh lime juice
1 tsp olive oil
1/2 cup fine, dry breadcrumbs
1/2 cup grated Parmesan cheese
2 TBS melted butter
1 1/2 tsp Mrs. Dash's tomato-basil seasoning blend

Directions
Preheat oven to 375. Place salmon on parchment paper on a baking sheet; pour lime juice and olive oil over salmon. Stir together breadcrumbs and next 3 ingredients; spread over salmon. Bake for 20 minutes.

Shrimp Scampi

This recipe was delicious and very easy! I doubled the wine and butter from the original recipe to make more "sauce".

Shrimp Scampi

Ingredients:
4 TBSP White Wine
4 TBSP Butter
1 tsp Dried Parsley Flakes
2 TBSP garlic, minced
juice of half a lemon
1 pound shrimp

Directions:
Melt butter in skillet. Once melted, add wine, parsley, and garlic. Mix well and add shrimp. Cook 6-9 minutes until shrimp is pink on both sides. I served this over angel hair pasta with some garlic bread.
