Weekly Menu: January 11-16

It's nice to be back blogging about weekly recipes! I'm finally working day shift which makes a huge difference in my time. I'm awake during the day as opposed to sleeping all day because I worked the night before. I'm not too tired to make dinner or go to the grocery. It's awesome!

As I posted last week, we started the Advocare 24 Day Challenge today. So our meals for the next 24 days will be in line with the plan. It's definitely not as "strict" as Whole30. It's more about making healthy, clean choices. Can't wait for the yummy food we have on the menu this week!

Weekly Menu: October 19-25



WEEK 3!! I can't believe next week is the last week of Whole30. I've made the decision that I am going to do a modified Whole30/Paleo diet. I say this because Paleo doesn't really include squash as an "allowed" food, but I think squash is delicious and I don't really see a reason to leave it out. I'm definitely going to keep eating Whole30/Paleo as much as I can.

On a side note, I went out to lunch with hubby and our daughter this weekend. I have to admit that I cheated and ate a small piece of bread. It just looked so good and I know that this restaurant has yummy rolls. Um, yeah it tasted like glue. No joke. It's crazy how your taste buds change in just a couple of weeks. I seriously took a little nibble and had no desire to continue eating it!

Weekly Menu: October 12-18


We are on to week 2! My first week of Whole30 was interesting. I noticed that I felt less stiff during this night when I got up to use the bathroom or first thing in the morning. I also have not taken any ibuprofen for my back since day 2! I don't know if this is placebo effect or what, but I think it's pretty crazy. Now the headaches have been pretty bad and I think that is mostly due to not eating enough carbs/starchy veggies. I also get the headaches when I haven't eaten in a while and have been too busy to eat. Can't wait for this week's meals!

Weekly Menu: October 5-11


This week I'm kicking off my Whole30 journey. So no dairy, no grains and most importantly NO SUGAR! The funny thing is that I think the no dairy will be harder then the no sugar for me. I love Starbucks in the morning. I don't think I need coffee to wake up, but I just love the taste of it! Lots of tasty things on the menu this week. I'll also try posting day-by-day with a food log.

Weekly Menu - May 28 - June 3


Well it's the end of May and Memorial Day weekend. We are getting summer kicked off! I hope everyone has some fun and safe plans for this weekend. We will be going to a barbecue at my sister-in-law's house with friends. Really looking forward to spending time with them! There were a few things that just didn't get made last week. Between night shift and the pregnancy, I was just too tired to actually make dinner so we had pizza instead. So I've put them back on the menu for this week.

Weekly Menu - May 21-27


As some of you might have heard, I'm pregnant! This has been quite a challenge to keep the blog running while battling aversions and cravings. Not to mention the fatigue, too! I'll soon be moving into the second trimester so I'm hoping that some of the aversions and cravings will go away so I can eat and function like a normal person. I'm excited about this week's menu and I hope that it doesn't look like it is coming from the kitchen of a preggo lady!

So excited that school is finally over and I am back in action! Only in a couple of weeks, I will start an internship where I work 7am-7pm or 7pm-7am three days a week - not very conducive to menus and dinner. We'll just have to play it by ear.

Well I'm getting to the home stretch of the semester. This is my last full week of classes and next week I only have one day. Then it's finals week! Luckily, I only have finals Tuesday, Wednesday and Thursday. I can't wait to be done! I hope everyone has great plans for Passover or Easter. I can't wait to celebrate with my family. Looking forward to the menu this week.

Weekly Menu - March 13-19


Very excited to be celebrating St. Patty's Day this week! As you know there is always a meal to go with the holiday as well. This week is also my first week of Pediatric clinical rotation so Saturday nights will now be spent with the little ones at Vanderbilt Children's Hospital. Poor hubby is on his own, but luckily he loves some frozen pizza!

Weekly Menu - March 6-11


I'm back! Things have been so crazy that getting recipes and menu plans posted has been almost impossible. The blog has been taking a backseat to nursing school. I'm trying to get better about it and hopefully I will get some stuff posted this week since I am on spring break. I'm very excited about our menu this week since we are celebrating Mardi Gras! The only thing that would make it better is if I was actually in NOLA.  :)

Weekly Menu - January 23-28




We are quickly approaching the end of January, but it's still snowing around here! Very unusual for us here in Tennessee. The meals this week are filling to combat the cold temps. I've also included a slow cooker meal. Tuesdays I have classes from 9am-6pm so it's a busy day and I definitely don't want to cook once I get home.  Looking forward to this week's meals!

School starts back this week! Tuesday nights will most likely be our slow cooker nights as I have class from 9am-6pm. I will just have to remember to get the food in the crockpot before I leave for class. Short list this week as we are having soup and grilled cheese one night and my sister-in-law is making us dinner another night.

Weekly Menu - January 1-7


It's been a while since I updated with a weekly menu. It's been a wild and crazy few weeks here, but I'm finally getting back into a routine. Next week school starts back and I'm strangely excited. I think it's part of that whole "routine" thing again. A few new things this week, hubby has made a resolution to incorporate veggies, but he HATES them. Being the "good" wife that I am, I am going to try some recipes from The Sneaky Chef in an attempt to help him out. He won't know that there are veggies in it though. This should be very interesting...

Weekly Menu - November 27 - December 3


Well, hello December! I'm looking forward to this month. Not only is my favorite holiday coming up (My birthday! Just kidding I mean Christmas), but fall semester will officially be over December 10th! After that I can begin my holiday baking - shortbread, spiced pecans and whatever else might peak my interest. Until after final exams I'll just be lucky to even get dinner on the table.

I honestly can't believe that Thanksgiving is less than 2 weeks away. Where has the year gone? It's 40 something days until Christmas! Ahhhh! If you are anything like me you haven't done any shopping yet. Oops. It's okay I've been a distracted by this little thing called nursing school. Brrrrr! It's chilly around here lately. We went from having nice fall weather to it being only 50 during the day and 23 at night! It's a little early for that kind of weather around here. Another month down. I can't believe it's already November! The holidays are right around the corner which hopefully means some yummy new recipes that will be posted. I can never resist doing some holiday baking.

Weekly Menu October 16-22


Since it's "fall break" this week (i.e. we get Monday and Tuesday off), I'm going to try my hand at canning. This could be disastrous and I may be calling people to take apple butter off my hands should it not work.  Next weekend, I will be away for a few days since I will be going to Cincinnati for a baby shower! I am going to attempt to leave you with some new recipes. A few carryovers this week from last - we didn't get around to eating everything.
